F-16 vs f-14.
F-14 might be easier to play (missile bus). F-16 is more for short range dogfight. Having few hundred matches in each, I would start with F14. It's less demanding in skill to perform just okay. Due to slower acceleration it's easier to perform notching. Overall it's easier to accustom with the very top tier.

The biggest thing about the F-14 compared to the other two is the lack of fly-by-wire, which makes it significantly more interesting and enjoyable to fly, imo. While its role is a lot more rigid due to being a more focused airframe, the actual flying of it kicks ass, it just feels spectacular to put through maneuvers.
